Jeffrey's Famous Cookies
3/4 C sugar
3/4 C brown sugar
1 C (2 sticks) butter
1 egg
2 1/4 C all purpose flour
1 tsp baking soda
1/2 tsp salt
1 (12 oz) pkg chocolate chips
Heat oven 375
By hand mix sugars, butter, and egg. Stir in flour, baking soda, & salt.(Dough will be stiff) Stir in chips. Drops rounded tablespoons about 2 in apart on ungreased cookie sheet bake 8-10 min. For bars press dough in ungreased retangular pan 13x9x2, bake 15-20 min.
Super Easy Chocolate bars
1 C butter
1/2 C sugar
1/8 tsp salt
2 C flour
1 (14 oz) can sweentened condensed milk
1 C semi-sweet chocolate pieces
1/2 C chopped walnuts (optional)
1/2 tsp vanilla
Crust: beat butter in large mxing bowl on high for 3o sec then add sugar & salt. On low low beat in flour. Press 2/3 of crust mixture into bottom of ungreased 13x9 pan.
Filling: Combine sweetden condensed milk and chocolate in a med sauce pan, stir on low heat until melted and smooth. Remove from heat add vanilla & nuts. Spread hot mixture over crust. Dot w/ remaining crust mixture. Bake 350 for 35 min, cool & cut.
Buttered White Chocolate Oatmeal cookies
1 C butter
2 C sugar
2 eggs
2 1/2 C flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
2 C oatmeal
1 pkg white chocolate chips
Mix butter and sugar until creamy & beat in eggs. Then add rest of ingred & mix well. Bake in a 350 preheated oven for 10 min.
Fleischmann's Cranberry White Chocolate Chip Cookies
1 1/2 C all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup Fleischmann's® Original Margarine-stick, softened (1 cup = 2 sticks)
1/2 cup granulated sugar
1-1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats
1 cup dried cranberries
1 cup white chocolate morsels
Preheat oven to 350°F. Combine flour, baking powder and salt in medium bowl; set aside.
Combine Fleischmann's and sugars on medium-high speed of electric mixture until fluffy. Add eggs and vanilla extract and beat until well blended. Reduce speed to medium, add flour mixture and stir until just combined. Fold in oats, cherries and chocolate chips.
Drop rounded tablespoon of dough onto baking sheet, leaving about 2 inches between each. Bake 12 to 14 minutes or until edges of cookies turn golden brown and centers are still soft. Cool on baking sheet 1 minute; remove to wire rack.
Meringues
2 egg whites
1/8 tsp salt
1/8 tsp cream of tartar
1 tsp vanilla
3/4 C sugar
3/4 C (6 oz) chocolate chips
Combine 1st four ingred greadually adding sugar while baeating mixture on high continue to beat until stiff peaks form. Gently fold in chocolate chips. If using cookie sheets, cover w/ brown paper(sacks). Just place dollops of the mixture onto cookie sheet & bake at 350 for 20-25 min. If using baking stone no brown paper bag required.
Lemon Delight
1 Cflour
1/2 C chopped pecans
1 stick margarine
1 (8 oz) pkg cream cheese
2-1/2 C cool whip
2 (3.4 oz) pkgs instant lemon pudding
3 cups milk
1 cup powdered sugar
1st layer: mix flour, pecans and margarine Press into 9x13 inch pan and bake at 350° for 10-15 minutes; let cool.
2nd layer: Blend together cream cheese and powdered sugar. Fold in 1 cup Cool Whip and spread on crust.
3rd layer: Mix instant puddings with milk and spread on top of second layer.
4th layer: Spread 1-1/2 cups Cool Whip on top and garnish with chopped pecans, if desired.
Dirt Cake
1 large package of Oreos® cookies
1 C sugar
2 packages instant vanilla pudding or chocolate
3 C milk
12 ounces of Cool Whip®
8 oz cream cheese
Candy gummy worms
Instructions
Crush the cookies; by placing them in a ziplock bag and use a rolling pin, set aside. (crumbs will resemble potting soil) In a bowl; beat cream cheese and sugar together and mix in cool whip. In any serving bowl or new flowering pot place 1/2 cookies, Mix in cool whip mixture. Mix pudding and milk and pour over cool whip. Place remaining cookies on top and place gummy worms in so that their heads poke out of the "soil". Refrigerate overnight.
Chicken Salad
2/3 cup un-cooked wild rice
3 chicken breast (cooked and diced)
1 cup minced scallions
2 cups chopped celery
1 8oz can water chestnuts (drained)
1/2 bag of green or red grapes (combination)
1 cup cashews
Dressing for salad: 1 and 1/4 cup of mayonnaise
1 T curry powder
3/4 cup of plain yogurt
1/2 cup chutney
Cook wild rice for added flavor you can use chicken broth for half the water.
Combine chicken with rest of ingredients. Save half the cashews.
Also save some of your grapes for garnish.
Mix dressing and then combine all together.
Garnish with rest of cashews and grapes.
Sugared Pecans
1 Gal Ziplock bag filled w/ pecans
1 teaspoon of vanilla and butter flavoring and add additional to taste.
With the cinnamon a start out with a Tablespoon of cinnamon add more if needed
Cloves and Ginger start out with 1/2 teaspoon and add additional to taste.
Snickerdoodles
1 c. soft butter
1 ½ c. sugar
2 eggs
Mix all above ingredients.
In another bowl, sift together the following and stir into above
2 ¾ c. sifted all purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
½ tsp. salt
Chill dough. Roll into balls the size of small walnuts. Roll in mixture of 3 Tbsp. sugar, 2 Tbsp cinnamon. Place about 2 inches apart on ungreased baking sheet. Bake until lightly browned, but soft, @ 400 degrees. 8 to 10 min.
Scottish Cheese Cakes
1/2 c softened butter
2 egg
1 c sugar
2 c currents
1 pkg ready made (prepared) pie crust
powdered sugar
Preheat oven 425 degrees
Mix butter, eggs, sugar & currents together until creamy.
Take pie crust roll out and cut out 2 inch circles (making mini pie
crust) Put mini pie crust into mini muffin pans and add tsp of mix
into each mini pie crust & bake for 6 min. After cool sprinkle w/
powdered sugar. Makes approx 4 doz.
